A batch of brownies is often the first dessert youngsters learn to make. Brownies are not only easy to make, especially if you use a mix, but also they’re delicious.
While the typical chocolate brownie is the most common, there are many yummy variations. Two of my favorites are Rocky Road Brownies, which will delight chocolate lovers, and Apple Brownies, which will satisfy those who aren’t fond of chocolate but still want a sweet, brownie-like dessert.
ROCKY ROAD BROWNIES
1 (19-1/2 ounce) package fudge brownie mix
2 cups mini marshmallows, divided
1 (12-ounce) package semisweet chocolate chips, divided
1 cup nuts, chopped and divided (your choice of nuts)
Prepare brownie mix according to package directions and spread in a greased 13-by-9-inch baking dish. Sprinkle 1 cup mini marshmallows, 1 cup chocolate chips and 1/2 cup nuts over batter.
Bake at 350 degrees for 28 to 30 minutes. Remove from oven and sprinkle with remaining marshmallows, chocolate chips and nuts.
Let cool completely before cutting into squares. Makes 2 to 3 dozen brownies.
APPLE BROWNIES
1/2 cup butter, softened
1 cup sugar
1 teaspoon vanilla
1 egg, beaten
1 1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup apples, cored, peeled and chopped
1/2 cup chopped nuts
1/4 cup powdered sugar
Beat together butter and sugar until fluffy; stir in vanilla and egg.
In a small bowl, combine flour, baking soda, baking powder and cinnamon. Add flour mixture to butter mixture and mix thoroughly.
Fold in apples and nuts. Spread in a greased 11-by-1/2-by-7-inch or a 10-by-10-inch baking dish.
Bake at 350 degrees for 30 to 35 minutes. Cool brownies and dust with powdered sugar.
Cut into squares. Makes one dozen.
