With so many activities going on during the summer months, you don’t like to spend a lot of time in the kitchen preparing your evening meals. Still, you want to serve your family something nourishing and tasty.
This Pork Skillet Supper recipe served with a Fresh Mandarin Orange Broccoli Salad is both. Each recipe is easy to make and is sure to be a hit with the entire family!
PORK SKILLET SUPPER
2 tablespoons butter or margarine
1 (1-pound) pork tenderloin, cut crosswise into 1/4-inch slices
20 ounces chicken broth, divided
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
8 small red potatoes, quartered
1 cup baby carrots, cut in half, lengthwise
1/2 cup green onions, sliced and 2 tablespoons reserved for garnish
1 cup sliced fresh mushrooms
2 tablespoons all-purpose flour
Melt butter in 12-inch skillet or Dutch oven over medium-high heat. Add pork slices; cook 3 to 5 minutes or until browned on both sides. Remove pork from skillet; set aside.
Reserve 1/4 cup of the broth in 1-cup measuring cup or small bowl. Add remaining broth, Worcestershire sauce, salt, pepper potatoes and carrots to skillet. Bring to a boil. Reduce heat; cover and simmer 15 to 17 minutes or until potatoes and carrots are tender.
Reserve 2 tablespoons onions for garnish. Stir remaining onions, mushrooms and pork slices into potatoes and carrots. Cover; simmer an additional 7-8 minutes or until pork is no longer pink in center.
Add flour to reserved broth in measuring cup; blend until smooth. Gradually stir into pork mixture. Cook over medium-high heat for 4 to 5 minutes or until mixture is bubbly and thickened, stirring constantly.
Sprinkle with reserved onions. Makes 4 (1 1/2-cup) servings.
Note: If mixture seems too thick, you may add additional chicken broth 1 tablespoon at a time until you reach the gravy mixture’s desired thickness.
FRESH MANDARIN ORANGE BROCCOLI SALAD
3 cups chopped broccoli florets
1/3 cup chopped red onion
1 (15-ounces) can Mandarin orange slices, drained of liquid
3/4 cup mayonnaise
3 tablespoons sugar
Mix broccoli, onion, and Mandarin orange slices in a salad bowl.
Combine mayonnaise and sugar and mix until smooth. Toss dressing mixture with broccoli mixture.
Cover and chill until serving time. Serves 4.
