Pork and Sweet Potato Dinner and Patty’s Oatmeal Rolls

If you’re in a hurry to get a meal on the table but still want it to be tasty and nutritious, this one-dish meal recipe for Pork and Sweet Potato Dinner is just what you’re looking for. It calls for pork tenderloin and smoked turkey sausage, along with vegetables and apple, making it a healthy choice for you and your family.

PORK and SWEET POTATO DINNER

2 tablespoons butter, divided

1 (12-ounces) pork tenderloin cut into 1-inch pieces

1/2 teaspoon salt

1/4 teaspoon black pepper

2 medium sweet potatoes, peeled and cut into 1/2-inch pieces (about 2 cups)

1 small onion, sliced

4 ounces smoked turkey sausage, halved lengthwise and cut into 1/2-inch pieces

1 small green or red apple, cut into 1/2-inch slices

3/4 to 1 cup sweet and sour sauce

2 tablespoons chopped fresh parsley (optional)

Heat 1 tablespoon butter in large nonstick skillet over medium-high heat. Add pork; cook and stir 2 to 3 minutes or until pork is no longer pink. Season with salt and pepper. Remove to plate.

Add remaining 1 tablespoon butter, sweet potatoes and onion to skillet; cover and cook over medium-low heat 8 to 10 minutes or until sweet potatoes are tender.

Add pork, sausage, apple and sweet and sour sauce to skillet; cook until heated through, stirring occasionally. Garnish with parsley, if used. Makes 4 servings.

PATTY’S OATMEAL ROLLS

1 1/4 cups boiling water

1 cup quick-cooking oatmeal

1/3 cup shortening

1/3 cup brown sugar

1 teaspoon salt

1 package yeast in 1/4 cup warm water

1 egg beaten

4 cups flour

Bring water to boil. Pour oats in a bowl and pour boiling water over oats and then stir in shortening, sugar and salt and let stand till lukewarm.

Sprinkle yeast in warm water and stir. Combine first mixture with yeast and add beaten egg and flour.

Cover and let rise about 20 minutes. Punch down and let rise again until doubled.

Shape into balls and place on greased baking pan. Bake at 350 degrees for 20-25 minutes or until golden brown. Makes about 32 rolls.
