Hot Crab Heros and Barbecups

Graduation season is upon us, which means it’s time for parties and get-togethers to celebrate the young adults who are completing high school or perhaps college before moving on to their next phase in life. If you’re looking for a couple of tasty dishes to serve at your special celebration, I recommend trying one or both of these recipes.

The Hot Crab Heros are easy to make and delicious. The Barbecups are a snap to make, too, and are sure to be a hit with your friends and family. Congratulations graduates!

HOT CRAB HEROS

2 (6-ounce) cans crabmeat, drained, flaked and cartilage removed

1/2 cup mayonnaise

1/4 cup minced fresh parsley

1/4 cup sour cream

1 tablespoon lemon juice

1/2 teaspoon garlic powder

1/8 teaspoon salt

1 (8-ounce) loaf French bread

2 tablespoons butter, softened

4 slices Swiss cheese

In a large bowl, combine the first seven ingredients. Slice bread horizontally in half; spread cut sides with butter.

Top with cheese; spread with crab mixture. Place on an ungreased baking sheet. Bake at 350 degrees for 20-25 minutes or until browned.

Cut into 12-14 slices.

BARBECUPS

1 pound ground beef

1/2 cup barbecue sauce

2 tablespoons brown sugar

1 can of 10 buttermilk biscuits

3/4 cup shredded cheddar or Monterey Jack cheese

1 tablespoon minced onion

Preheat oven to 400 degrees. In a large skillet, brown the meat and drain.

Add the barbecue sauce, onion and brown sugar. Simmer for 5 minutes.

Separate biscuits into halves and press and mold into two greased muffin pans. Spoon mixture into muffin cups and top with the shredded cheese.

Bake at 400 degrees for about 12 minutes or until golden brown. Remove gently with spoon after allowing to cool. Makes 20 Barbecups.
