Honey-Mustard Chicken and Smashed Potatoes with Lemon-Garlic Sauce

Chicken is an affordable and versatile meat you can prepare many ways, providing your family with a variety of tasty meals. If your family likes chicken nuggets dipped in honey-mustard sauce, then this chicken recipe may become a new favorite.

It’s great served with these Smashed Potatoes and Lemon-Garlic Sauce. Both recipes are tasty and easy to make.

To round out your meal, you might also want to serve some broiled, fresh asparagus with Parmesan cheese. Enjoy!

HONEY-MUSTARD CHICKEN

6 boneless, skinless chicken breast halves

1/2 cup bottled honey-mustard salad dressing

1/2 cup honey

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Preheat oven to 350 degrees.

Cut chicken breast halves into strips and place in a greased medium-size baking dish. In a bowl, combine the honey-mustard salad dressing, honey, smoked paprika and garlic powder and mix well. Spread half the honey-mustard mixture over the chicken strips.

Bake for 20-25 minutes; turn the chicken over and spread with the remaining half of sauce. Bake another 10 minutes, or until chicken is done.

SMASHED POTATOES with LEMON-GARLIC SAUCE

4 medium-sized red potatoes

6 tablespoons butter, melted

2 teaspoons lemon rind

4 tablespoons lemon juice

1 teaspoon garlic salt

1 teaspoon fresh parsley, chopped

Cut an X across the top of each potato and place in a microwave oven or pre-heated regular oven set at 350 degrees. Bake all four potatoes either in a microwave or regular oven until soft inside.

In the meantime, prepare the sauce by stirring together melted butter, lemon rind, lemon juice and garlic salt. Mix until thoroughly combined. Add freshly chopped parsley and mix again.

When a fork goes through the potatoes easily, remove them from the microwave or oven and gently smash slightly with a fork on top of the X cut.

Spoon the desired amount of sauce over the top of potatoes.

Note: Be sure to mix all the sauce ingredients while butter is melted and warm and keep warm until spooned on top of potatoes. Do not let it cool and become solid.
