Cola is the soft drink of choice for many, but it also can lend flavor to meat dishes. This Cola Chicken recipe is worth trying if you are looking for an alternative to fried, baked or stewed chicken..
This Fruited Slaw goes great with it the chicken dish because the sweetness of the fruit in the slaw brings out the flavor of the chicken even more. It’s easy to make, too.

COLA CHICKEN
1/2 cup chopped onion
2 tablespoons vegetable oil
4 boneless, skinless chicken breast halves
1 (12-ounce) can of cola
1/2 cup ketchup
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
4 1/2 teaspoons cornstarch
3 tablespoons cold water
In a skillet, saute onion in oil until tender. Add chicken; brown on all sides.
Carefully add cola, ketchup, garlic powder, salt and pepper. Cover and simmer for 25-30 minutes or until the chicken juices run clear. Remove the chicken and keep warm.
Combine the cornstarch and cold water until smooth; add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.
Return chicken to the pan and heat through. Makes 4 servings.
FRUITED SLAW
1 (8 1/4-ounce) can pineapple chunks
1 (8-ounce) carton key lime or orange-flavored yogurt
1 tablespoon lemon juice
3 cups finely shredded cabbage
1 (11-ounce) can mandarin orange sections, drained
1 cup thinly sliced celery
1/2 cup chopped walnuts
1/4 cup raisins (optional)
Drain pineapple, reserving 2 tablespoons syrup. In a small bowl combine the reserved syrup, yogurt and lemon juice.
In a large bowl combine the pineapple, cabbage, oranges, celery, nuts and raisins (if used). Fold in yogurt mixture.
Cover and chill until ready to serve. Makes 8 servings
