Cheesy Crab Dip, Pumpkin Patch Rocky Road Brownies

The end of October is quickly approaching, so it’s time to start thinking about Halloween parties or get-togethers with friends and family. Of course, it wouldn’t be a party without tasty refreshments.

Here are a couple of new recipes to add to your old favorites – a Cheesy Crab Dip to serve with crackers for a satisfying, salty snack and Pumpkin Patch Rocky Road Brownies for a scrumptious sweet treat.

CHEESY CRAB DIP

1 (6-ounce) can crab meat, drained and flaked

1 (8-ounce) package of cream cheese, softened

1 cup mayonnaise

1 1/2 cups grated Parmesan cheese

1 cup sour cream

4 cloves garlic, peeled and crushed

1/2 teaspoon seafood seasoning

Preheat oven to 350 degrees. In a small baking dish, mix together all the ingredients.

Bake, uncovered, in the preheated oven 40 minutes or until bubbly and lightly browned. Serve with your favorite crackers.

PUMPKIN PATCH ROCKY ROAD BROWNIES

1 (18.3-ounce) box fudge brownie mix

Water, vegetable oil and eggs called for on brownie mix box

1 cup chopped pecans, walnuts or peanuts

3 cups miniature marshmallows

1/2 cup white milk chocolate chips

1/3 cup whipped vanilla ready-to-spread frosting (from 12-ounce container)

8 drops green food color

24 small pumpkin-shaped candies

Heat oven to 350 degrees. Spray or grease bottom only of 13-by-9-inch pan.

Make brownie batter as directed on box, except stir in your favorite choice of nuts and spread in

pan. Bake 24 to 26 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Immediately sprinkle warm brownies evenly with marshmallows and white chocolate chips. Bake about 3 minutes longer or just until marshmallows are puffed. Cool 30 minutes.

In a small microwavable bowl, microwave frosting uncovered on high for 10 seconds; stir in food color.

Drizzle over bars and cool completely, about 1 hour.

Cut into 6 rows by 4 rows. Top each bar with 1 candy pumpkin. Makes 24 brownies.

Note: Several pieces of candy corn on each square can be substituted for pumpkin candies.
