BBQ Chicken Wraps and Grilled Cheese Loaf

Grilling season is in full swing now, and the selection of foods you can prepare on the grill is endless. Here are two recipes, BBQ Chicken Wraps and Grilled Cheese Loaf, that are great cooked on the grill. However, if a sudden rain pops up, you can make them under the broiler in your oven as well.

Both are easy to make. They’re delicious, too!

BBQ CHICKEN WRAPS

6 medium flour tortillas or 8 Small flour tortillas

1 1/2 pounds skinless, boneless, chicken breasts

3/4 cup of your favorite barbecue sauce

1 red or yellow onion, sliced thin

1 green bell pepper, seeded and cut into strips

1 red or yellow sweet pepper, seeded and cut into strips

1 tablespoon vegetable oil

Place chicken breasts on heated grill or in the middle of a broiler pan (if making in the oven).

Brush with barbecue sauce, reserving 1/4 cup for later.

Spread onions and peppers on foil, if grilling or on side of chicken in a pan if broiling.

If broiling, brush vegetables with oil and broil for 3-4 minutes. Turn chicken and vegetables and brush with reserved sauce; broil an additional 5-7 minutes or until chicken is fully cooked.

If grilling, brush with additional sauce and cook until chicken is fully done in the middle.

Heat tortillas according to package directions. Slice chicken into strips. Place chicken strips and cooked vegetables equally in middle of each tortilla and fold in sides to enclose filling.

Serve warm and enjoy! Makes 6-8 wraps.

GRILLED CHEESE LOAF

1 cup (4-ounces) shredded mozzarella cheese

2 tablespoons margarine or butter, softened

1/2 teaspoon garlic salt

4 (1/4-cup) medium green onions, chopped

4 ounces cream cheese, softened

1 loaf (1-pound) unsliced French bread

Heat coals or start gas grill.

Mix all ingredients except bread. Cut bread diagonally into 1-inch slices, cutting almost to bottom of loaf. Spread cheese-mixture on cut sides of bread.

Place on a 28-by-18-inch piece of heavy-duty aluminum foil; wrap foil securely.

Cover and grill bread 4 to 6 inches from medium heat for 8 to 10 minutes, turning once, until cheese is melted. Open foil. Grill bread uncovered 5 minutes longer.

If using broiler, wrap cut loaf in heavy-duty foil and broil for 4-5 minutes, turning once. Then open foil on the top and put under the broiler 4-6 inches from flame and broil for 2-3 minutes
