With the hot days of summer upon us, there’s nothing like a nice cold, refreshing side dish of a salad or coleslaw to go with your meal. This Apple Cinnamon Coleslaw recipe goes great with this Greek Pasta Torte, which also calls for just a pinch of cinnamon.
Both dishes are tasty. Served together, they make a meal your family will love.
APPLE CINNAMON COLESLAW
Dressing:
1 (8-ounce) carton vanilla or your favorite fruit yogurt
2 tablespoons frozen apple juice concentrate, thawed
1/2 teaspoon cinnamon
Salad:
2 cups shredded cabbage
1 1/2-cups chopped apples
1/2 cup chopped walnuts
1/2 cup chopped raisins
In a small bowl, combine all dressing ingredients; blend well. In a medium bowl, combine all slaw ingredients; toss.
Pour dressing over coleslaw; toss to coat. Makes 8 (1/2 cup) servings.
GREEK PASTA TORTE
12 ounces (4 cups) uncooked ziti or penne pasta
1 pound lean ground beef
1/2 cup chopped onion
2 cups tomato pasta sauce
1/2 teaspoon cinnamon
3 cups milk
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
3 eggs
1 cup grated Parmesan cheese, divided
1/4 cup plain bread crumbs
1 tablespoon butter or margarine, melted
Spray a 13-by-9-inch (3-quart) baking dish and a 16-by-12-inch sheet of foil with nonstick cooking spray and set aside.
Cook pasta in a large saucepan as directed on package. Drain in colander. Cover; keep warm.
Meanwhile, in large skillet, cook ground beef and onion over medium heat until beef is thoroughly cooked, stirring frequently. Drain.
Stir in pasta sauce and cinnamon. Bring to a boil. Reduce heat; simmer 10 to 12 minutes or until slightly thickened, stirring occasionally. Heat oven to 350 degrees.
In same large saucepan, combine 1 cup of milk, flour, salt and pepper; mix with wire whisk until smooth. Stir in the remaining 2 cups milk. Cook over medium heat until mixture boils and is slightly thickened, stirring constantly. Boil 1 minute, stirring constantly. Remove from heat.
Beat eggs in medium bowl with wire whisk. Gradually add half of the hot milk mixture, stirring constantly. Stir egg mixture back into mixture in saucepan. Add 3/4 cup Parmesan cheese, mix well. Add cooked pasta; toss gently to coat evenly.
Place half of the pasta mixture in sprayed baking dish. Spoon beef mixture evenly over pasta mixture. Top with remaining pasta mixture. Cover tightly with sprayed foil.
Bake at 350 degrees for 35-40 minutes or until the edges are bubbly. Meanwhile, in a small bowl, mix breadcrumbs and butter.
Remove foil; sprinkle bread crumb mixture over top. Bake uncovered an additional 5 minutes.
Let stand 5 minutes before serving. Sprinkle 1/4 cup Parmesan cheese on top. Makes 8 servings.
