My Leader Yummy: Rainy Day BBQ Pork Sandwiches and Salted Cashew Butterscotch Cookies

It’s so disappointing to plan a barbecue a week ahead of time, only to have it rain all day that day. If your

grill is not located on a covered porch, then often you must change your menu. This recipe for Rainy Day BBQ Pork Sandwiches is the perfect answer to your problem. If you want a light dessert to go with it, these Salted Cashew Butterscotch Cookies are just the answer.

Rainy Day BBQ Pork Sandwiches (slow cooker recipe)

4 pounds boneless pork loin roast, fat trimmed

1 can (14 1/2 ounces) beef broth

1/3 cup Worcestershire Sauce

1/3 cup hot sauce (optional)

Sauce:

1/2 cup ketchup

1/2 cup molasses

1/4 cup yellow mustard

1/4 cup your favorite smoky BBQ sauce

1/4 cup Worcestershire Sauce

2 tablespoons hot sauce (optional)

8-10 hamburger or Asiago cheese buns

Place roast on bottom of a lightly greased slow cooker.

Combine broth, Worcestershire Sauce and hot sauce (if used).

Pour over roast, cover and cook on high-heat setting for 5 hours, or until roast is tender.

Meanwhile, combine ingredients for sauce in a large bowl; set aside.

Transfer roast to a large cutting board. Discard liquid. Coarsely chop roast and return meat to pot. Pour reserved sauce over chopped meat in pot and heat on high-heat for an additional 8-10 minutes.

Spoon mixture onto sliced buns and serve with your favorite chips.

Makes 8-10 servings.

Salted Cashew Butterscotch Cookies

1 1/2-cups regular all-purpose flour

1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1/2 cup butter or margarine

1 1/2 cups brown sugar, packed

1 egg, unbeaten

1/4 cup milk

1 1/2 cups Rice Krispies cereal

1 cup salted cashews, chopped

1 cup butterscotch morsels

Heat oven to 350 degrees.

Sift together: flour, baking powder, baking soda and salt; set aside.

Cream butter until light and fluffy, gradually adding brown sugar.

Add egg; beat well. Add flour mixture alternately with milk, mixing well after each addition.

Stir in Rice Krispies, cashews and butterscotch morsels.

Mix well and drop by tablespoonfuls, onto greased cookie sheets.

Bake 8-10 minutes or until done.

Remove to wire racks to cool.

Makes about 3 dozen cookies.
