Accompanied story, “He’s Raising More than Apples and Peaches,” published 9-12-2013

2 cups sugar

1 cup butter

1 teaspoon baking soda (heaping); dissolved in 1/2 cup hot water

3 eggs

1 cup raisins (optional)

1/2 cup nuts

Pinch of salt

3 apples cut fine (any variety)

1 teaspoon cinnamon

3 cups flour

Cream sugar with butter. Add soda mixed with water, then eggs. Sift flour with salt and spices, Add to creamed mixture; Stir in raisins, nuts and apples.

Bake in greased glass pan at 350 degrees for 50 minutes.

Icing:

3 tablespoons butter

1/2 cup brown sugar

1/2 cup confectioner’s sugar

2 tablespoons milk

Melt butter. Add brown sugar, simmer until dissolved, add confectioner’s sugar and remove from heat. Add milk. (May require additional milk).

While cake is still warm (not hot), drizzle over top.
