Cheddar Shrimp Nachos, Seafood Alfredo

Seafood is a favorite for many families. During the Lenten season, seafood is especially popular, particularly shrimp, which can be prepared in so many ways.

If you’re planning a party and appetizers are on your menu, these Lent-friendly Cheddar Shrimp Nachos are both tasty and easy to make.

If you’re serving dinner at that party or even just planning a family dinner, this Seafood Alfredo is a great choice, too.

Your friends and family are sure to enjoy both recipes.

CHEDDAR SHRIMP NACHOS

3/4 pound deveined, peeled, cooked shrimp, chopped

1 1/2 cups (6 ounces) shredded cheddar cheese

1 (4-ounce) can chopped green chilies, drained

1/3 cup chopped green onions

1/4 cup sliced ripe olives, drained

1/2 cup mayonnaise

1/4 teaspoon ground cumin

48 tortilla chip scoops

In a large bowl, combine the shrimp, cheese, chilies, onions and olives. Combine the mayonnaise and cumin and then add to the shrimp mixture and toss to coat.

Drop by tablespoons into tortilla scoops. Place on ungreased baking sheets. Bake at 350 degrees for 5-10 minutes or until cheese is melted. Serve warm. Makes 4 dozen.

Note: If you prefer not to use green chilies, you may use banana pepper rings instead.

SEAFOOD ALFREDO

1 (12-ounce) package bow tie pasta

2 garlic cloves minced

2 tablespoons olive or vegetable oil

1 (8-ounce) package imitation crabmeat, flaked

1 (5-ounce) package frozen cooked salad shrimp, thawed

1 tablespoon lemon juice

1/2 teaspoon pepper

1 (16-ounce) jar Alfredo sauce

1/2 cup frozen peas, thawed

1/4 cup shredded Parmesan cheese

Cook pasta according to package directions. Meanwhile, in a large skillet, saute garlic in oil until tender.

Stir in the crab, shrimp, lemon juice and pepper. Cook and stir for 1 minute. Add Alfredo sauce and peas. Cook and stir until heated through.

Drain pasta; top with seafood mixture and sprinkle with Parmesan cheese. Makes 4-6 servings.
