When you hear the word dumplings, your first thought probably is a steaming pot of the old family standby, chicken and dumplings. You might even think about the old-fashioned dessert, apple dumplings. Both may be called dumplings, but there’s a world of difference between them.

The only dumplings I knew about when I was a kid were the big, fluffy type my mom called drop dumplings, as opposed to those that were rolled out and cut into squares and then dropped into a pot of stewed chicken, rich with chicken broth and onions.

Since then, I found an unusual dessert recipe for Caramel Dumplings. They are fluffy dumplings dropped into hot caramel sauce that may include chopped apples. You may also add a dollop of whipped topping or ice cream if you’d like a more elegant dessert.

This is an easy and delicious dessert that can be ready in minutes, satisfying any caramel-loving sweet tooth!

CARAMEL DUMPLINGS

2 tablespoons butter or margarine

1 1/2 cups packed brown sugar

1 1/2 cups water

DUMPLINGS:

1 1/4 cups all-purpose flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup milk

2 tablespoons butter or margarine, softened

2 teaspoons vanilla

1/2 cup coarsely chopped peeled apple, optional

In a skillet, heat the unsoftened butter, brown sugar and water to boiling. Reduce heat to simmer. Meanwhile, mix together all dumpling ingredients. Drop the flour mixture by tablespoonfuls into the simmering sauce. Cover tightly and simmer 20 minutes. Do not lift lid.

Serve warm with whipped topping or ice cream, if desired.
