It seems that Easter has officially ushered in our long-sought springtime weather! Although it’s not quite time to place our potted plants out on the deck or porch, we can thoroughly enjoy the colorful daffodils, pansies and crocus blooms that seem to have popped out of the ground overnight!
The sunshine and blue skies beckon us to spend more hours outside in the warm, fresh air and less time in the kitchen. So it’s great when we can come up with a meal for lunch or dinner that requires less preparation and cooking time, but still satisfies those hungry family members.
Most men seldom will pass up a bacon cheeseburger, but when you make this Bacon Cheeseburger Roll recipe, even kids will eagerly give it a try. The bacon-cheesy flavor is hard to resist and the best part is it’s so easy and quick to make.
You can fix this dish for lunch, served with your favorite chips, or as the main dish for dinner, served with fries and a vegetable or salad. In cold weather, it’s great served with a steaming bowl of chili.
To save time, you can use a refrigerated pizza crust to make it, but if you have time you can save money by making your own one-crust pizza dough from scratch. Either way, in less than an hour, you can have the main dish on the table and ready to enjoy and still have time for outdoor fun.
BACON CHEESEBURGER ROLL
1 pound lean ground beef
4 slices bacon, chopped
1/2 cup onion, chopped (about 1 small onion)
1/2 pound Velveeta cheese cut into 1-inch cubes
1 (13.8-ounce) package refrigerated pizza crust
Preheat oven to 400 degrees. Cook ground beef, bacon and onions in large skillet on medium-high heat, stirring occasionally, until ground beef is evenly browned. Drain; return meat mixture to skillet. Add Velveeta; cook until completely melted, stirring frequently. Remove from heat; set aside.
Unroll pizza dough onto baking sheet sprayed with cooking spray. Press into a 15-by-8-inch rectangle. Top evenly with meat mixture. Roll up dough, starting at one of the long sides, like a jelly-roll. Rearrange, if necessary, so roll is seam-side down on baking sheet.
Bake 20 to 25 minutes or until golden brown. Cut into desired-size slices and serve hot.
Note: You can also substitute an 8-ounce package of shredded Velveeta or shredded cheddar cheese for the Velveeta cubes. If you want to jazz it up a bit, you can add a little mustard and/or ketchup on the top and serve with sliced or quartered dill pickles.
