Mother’s Day is here, so if you’re thinking of making Mom a quick dinner so you’ll have time to visit with her, I recommend you try one of these two dishes. They both are easy to fix and tasty. The two also go well together.
SHAVED STEAK AND MUSHROOM SANDWICH
1 pound shaved beef steak
1 tablespoon olive oil
2 cups beef broth
1/2 package of dry onion soup mix
Salt and pepper to taste
1 (4-ounce) can of mushroom pieces, drained
12 slices provolone cheese
12 sandwich buns
Sear shaved beef steak in olive oil until no longer pink, and season with salt and pepper. Mix onion soup mix and beef broth together and pour mixture over browned beef. Add mushroom pieces and simmer for 15 minutes
Meanwhile, toast buns, middle sides up, under broiler for 2-3 minutes or until light-brown. Remove buns from oven and use a slotted spoon to spoon beef mixture over bottom half of toasted buns.
Place a slice of provolone cheese on top of beef mixture on buns. Return cheese-covered beef buns to broiler and broil for 2-3 minutes or until cheese melts.
Remove from oven and place the top half of buns over melted cheese and steak on bottom half of buns. Serve warm. Makes 12 sandwiches.
CABBAGE PATCH STEW
1 pound ground beef
1 medium onion, thinly sliced
1 1/2-cups coarsely chopped cabbage
1/2 cup chopped celery
1 (16-ounce) can diced tomatoes
1/2 cup black beans OR kidney beans
2 1/2-cups beef broth
1 teaspoon salt
1/4 teaspoon black pepper and 1 teaspoon chili powder
1 recipe of dumplings*
Cook and stir ground beef in Dutch oven until brown; drain. Add onion, cabbage, and celery and cook and stir until vegetables are light brown.
Stir in tomatoes, broth, black beans or kidney beans, salt, pepper and chili powder and heat to boiling. Reduce heat
Prepare dumplings as directed and drop by spoonsful onto boiling stew. Cook, uncovered, over low heat 10 minutes. Cover and cook another 10 minutes. Makes 5 to 6 servings.
*Dumplings: Mix 2 cups biscuit mix with 2/3 cup milk until soft dough forms. Drop by spoonsful into boiling hot meat and vegetable stew. Cook, uncovered, over low heat 10 minutes. Cover and cook 10 minutes longer. Makes about 12 dumplings.
