Bavarian Beef Roast with Gravy and Festive Green Beans

With the holidays just around the corner, it’s a good time to serve more meals with beef before we get into the traditional turkey and ham dinners and their leftovers. This Bavarian Beef Roast with Gravy, which is made in a slow cooker, is a great dish to serve now or any time of year.

Serve the roast with a side dish of these Festive Green Beans, which get a special twist from the addition of salsa. The green beans offers a good combination of flavors and goes especially well with the beef if it’s served with some mashed potatoes.

BAVARIAN BEEF ROAST with GRAVY

1 boneless beef rump or chuck roast (2-3 pounds)

3 tablespoons stone-ground mustard

1 tablespoon creamy horseradish sauce

1 (0.87-ounce) envelope brown gravy mix

1/2 cup apple juice or beer

1/2 cup water

3 tablespoons all-purpose flour

1 tablespoon chopped chives

Place the roast in a 3 ½- to 4-quart slow cooker. In a small bowl, mix mustard, horseradish sauce and gravy mix. Spread the mixture over the roast.

Pour apple juice or beer around the edge of roast, but not on the roast. Cover and cook on low setting for 7-8 hours. Remove the roast from the slow cooker when thoroughly cooked; place on serving platter and cover to keep warm.

In a 2-quart saucepan, blend water and flour and stir until smooth. Pour cooking juices from slow cooker into saucepan and stir. Heat to boiling over medium-high heat, stirring constantly. Stir in chives.

Cut roast into slices; serve with gravy. Makes 6-8 servings.

FESTIVE GREEN BEANS

1 pound fresh green beans or 1 (16-ounce) can green beans, drained

1/2 cup water

1/2 teaspoon salt, optional

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

3/4 cup Mexican chunky salsa

Cut beans into 2-inch pieces (if using fresh green beans); place them in a saucepan. Add water and salt, if desired; bring to a boil.

Reduce heat and simmer for 15 minutes or until tender; drain. Add pepper, garlic powder and chunky salsa; heat through.

Serve warm. Makes 6 servings.
