After Christmas we’re sometimes left with a little of the holiday ham and look for a way to use it to make something completely different. This Creole Jambalaya is a good way to use that leftover ham.
For dessert, you might like this Apple Crumble, a fruity delight and nice change of pace after eating all those Christmas cookies.
CREOLE JAMBALAYA
(Slow Cooker)
1 cup chopped onions
1 cup chopped green bell pepper
1 cup chopped celery
3 cloves garlic, finely chopped
1 (28-ounce) can diced tomatoes, undrained
2 cups chopped ham
1 tablespoon parsley flakes
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon black pepper
1/4 teaspoon red pepper sauce
3/4 pound uncooked peeled, deveined, medium shrimp, (thawed if frozen)
4 cups hot cooked rice
Mix all ingredients except shrimp and rice in a 3 ½- to 6-quart slow cooker. Cover and cook on the low heat setting for 6 to 7 hours, or until vegetables are tender.
Stir in shrimp. Cover and cook on the low heat setting about 30 minutes more, or until shrimp are pink and firm. Serve with rice. Makes 8 servings.
APPLE CRUMBLE
6-7 apples, peeled and cored
3/4 cup white sugar
Dash of lemon juice
Topping:
1 cup rolled oats
1 cup regular flour
1/3 cup white sugar
1/3 cup brown sugar
3/4 teaspoon salt
1/2 teaspoon cinnamon
Nutmeg and allspice to taste (or omit, if you prefer)
1 stick of butter or margarine
Peel, core and slice apples. Add sugar and lemon juice and mix with apples. Place mixture in a greased 7-by-11-inch baking dish.
To make crumble mixture, combine oats, flour, white and brown sugar. Add salt, cinnamon, (nutmeg and allspice to taste, if used). Chop a stick of butter or margarine with dry ingredients into pea-size bits.
Spread the crumbles over apples and bake at 375 degrees for 35-40 minutes or until apples are soft and topping is lightly browned. Makes 6-8 servings.
NOTE: Can be served with whipped topping or a scoop of vanilla ice cream, if desired.
