Anyone may dine at the new Four Lakes Restaurant & Event Center even though it is connected to the Raintree Country Club golf course clubhouse, said Tom Keightley, who co-owns the restaurant with Shannon Crews.
The restaurant and event center, 5925 Plantation Drive, west of Hillsboro, opened Jan. 18.
“We’ll be hosting all of the golf people when they come in when they’re done, but we’re open to the public,” Keightley said.
Keightley said he and Crews have owned restaurants before, including The Boro & Den in Hillsboro, and liked the idea of reopening an establishment where the Raintree Country Club Restaurant had operated for years.
“We shut down The Boro in November,” he said. “I think this is a better fit for our vision.
“We’re leasing the space from the country club owner, Dave Tucker. The Raintree Country Club Restaurant has been closed since December 2015. The bar has been open periodically for events since then.”
Keightly described the fare at Four Lakes as “mostly American.”
“We have steaks and burgers,” Keightley said. “We have a lot of scratch-made items. Our steaks are definitely top-notch quality. We also have 14-ounce, bone-in pork chops covered with our cherry balsamic sauce.
“Our bacon-wrapped jalapeno poppers are also made from scratch. Our fried strawberry cheesecake is (a favorite) right now.”
He said one of the adult beverages – the Four Lakes Cocktail – has been particularly popular.
“Our bartenders make quality cocktails, including the Four Lakes Cocktail. That has muddled blackberries, Bumbu rum and pineapple juice.”
Keightley said while he sees Four Lakes Restaurant as a place for anyone, including youngsters, to dine, he believes couples will really gravitate toward it.
“For sure, we’re a date destination,” he said. “We’ve got a good wine selection. There is no dress code. ‘Elevated casual’ is probably the new buzz term.”
Keightley said he and Crews have a staff of 15 operating the business, which includes a space for events.
“Our banquet facility downstairs seats up to 150 people,” he said.
In the restaurant, the main dining room has a capacity of 90, while the bar area can accommodate about 40. In addition, six tables are available on the patio, weather permitting.
The restaurant is open from 11 a.m. to 9 p.m. Tuesday through Saturday and 11 a.m. to 8 p.m. Sunday.
“Reservations are recommended for weekends, but not required,” Keightley said.
