Crispy Edges Eats and Shakes may open at 700 Collins Ave. in the old Champions Mercantile building by the end of March.

Chris Jacobs said he hopes to open his new restaurant, Crispy Edges Eats and Shakes, in Festus next month.

He intended to open the restaurant last fall but encountered delays during the renovation of the building at 700 Collins Drive that previously housed the Champions Mercantile store.

“I’ve still got some work to do before we open,” Jacobs said Feb. 20. “The target now is probably the end of March. It’s just been delays (in renovations), like the plumber was about a month behind.”

The Festus City Council voted unanimously Monday night to approve a liquor license for Crispy Edges.

Jacobs said Crispy Edges will serve made-from-scratch Italian-American fare, like pizza, sandwiches, bruschetta, toasted ravioli and shaved brussels sprouts. The restaurant also will offer specialty milk shakes. It will serve wine and beer, too.

When trying to pick a name for the restaurant, Jacobs said Crispy Edges came to mind because it applies to a lot of the food he loves and will serve at the establishment.

Jacobs said he will begin hiring at the end of this month.

He formerly owned the Local House Restaurant and Bar in Arnold, which is still open under different ownership.
